Snack Time Peanut Butter Mug Cake

Hello everyone!

I think the blog is about due for another recipe, don’t you? We’ve been focusing on eating well and exercising here lately, so here’s a nice little single serve snack that you can add to your collection!

It’s also a Trim Healthy Mama (S) fuel, for those who may be interested, containing both shredded coconut and peanut butter! I’m not crazy about the taste of coconut, but it’s okay mixed in with the rest of the ingredients in this mug cake… or muffin, depending on what term you use. 😉 It’s also cooked in the microwave, so you can mix one up fairly quickly for an afternoon snack!

Here’s what you’ll need:

1 egg

3 tbsp. shredded coconut

2 tbsp. peanut butter

1 tbsp. rolled oats

1 tsp. butter

1/4 tsp. baking powder

6 drops liquid stevia extract (or sweetener of choice)

Tiny pinch of salt

Place all of the ingredients in a microwave safe mug, and stir well. Don’t use a container that’s too short, since the contents rise quite a bit in the microwave, and of course you won’t want it overflowing your mug!

Microwave for about 1 minute, just adjust the time according to how your microwave cooks. And that’s it! You could also try substituting almond flour for the shredded coconut, or throw in part of a banana for a little bit different twist! Have a great rest of your day!
